Because they don't keep the state for your site only but apply it to all.
Why should a user change his settings for your site and make others
unusable?

And a browser fault should not keep us from designing cleverly.
I don't believe in font-resizing being useful, users with real visual
problems need to zoom the whole content, including the layout and images,
much like Opera does it. Just resizing the font actually can make a lot of
float or absolute position layouts break apart.
My stance is if you want to _really_ help the users, give them more:
