I have found it reasonable successful to point out to clients that:

-There is no need to print out what generally makes up the rest of the 
page like menus, related links, search tools etc since all these become 
obsolete once on hardcopy.

-Printing accross the full page in a serif font ( a list apart) is more 
easily readable - most non-techie people tend to print articles and read 
them anyway.

-Printing in B+W is cost effective versus full color printing.
