Here's how I explain it to my students: (Feel free to disagree with me)
XML is like an alphabet from which languages can be created. XHTML is one of
those resulting languages. So are MML and ChemML.
Just like from the A-Z alphabet we can create English, Spanish and French.
BTW: I've recently stopped teaching HTML altogether and just teach XHTML.
